Steam is injected in metered amounts into the slurry resulting in rapid heat transfer and cook-out of pre-gelatinized starch molecules and mixing. The mixing is controlled by an internal stem plug and nozzle that meters the amount of steam and results in instantaneous hydrolization of the starch molecules.
